Roasted Baby Beets

Inspired by:  Beet and goat cheese salads






Roasted Baby Beets: 2 bunches of baby yellow beets

  • 2 small bunches of coloured beets of your choice
  • 2.5 tbsps of oil
  • salt for seasoning

How to make them:

Preheat your oven to 350°F (180°C).  Trim the stems off the beets and wash under warm water.  You will need to scrape off any dirt at the base of the stems and on the beet itself with your pairing knife.  Take your time doing this.  It will take a little while but is necessary to make sure all the dirt and grit has been removed. Rinse them well.



Cut a large piece of aluminum foil and drizzle with about 1 tbsp of oil.  Place the beets in the centre of the foil and drizzle them also with oil (about 1.5 tbsps) and sprinkle with a little salt.  Bring the edges of the foil to the centre and seal to form a little purse.



Cook the beets in the centre of your oven for 35 minutes (for small beets) or until tender when pierced with the tip of a sharp knife.  Reserve and cut in half to garnish.  They can be served at room temperature.  They can be prepared and kept in an airtight container in the fridge for a few days.  Great on salads too. Enjoy!
